Picked up a lightly used Kamado Joe this past week, so had to give it a go this weekend.  Trimmed, mustard lathered and then seasoned a packers brisket then threw back in the fridge for 24-48 hours until I was ready.  Planned on starting really early on Friday since I was off, but drank too much the night before at our block party and didnt happen to wake until 5:30.  Meat got on the pit at 6:30 though so all was OK. I used the Kamado Joe lump and some chunks of pecan and apple I bought from Academy.  Temps on the KJ were SUPER easy to maintain and tweaking even when the sun rose and started to heat everything up was at a minimum.  I was about to order a DigiQ or Pitmaster IQ but I am thinking why even bother.  Pictures below show the process from applying the rub, to a quick peak into the pit at 165 when I pulled to wrap.  Then I pulled it back off at 185 and unwrapped and put back on until 195 to firm up the bark.  I was very impressed overall....so impressed, I cleaned the UDS today and listed it for sale.  Kinda sad to see it go, but I know I wont use it with this new pit available to me.  Enjoy!

Nice looking brisket! One can never have too many smokers! I'd keep the UDS hanging around for cold smoking and for the times when you need to smoke 4 shoulders at a time.

Thanks guys. Wife wants the back patio to be cleaned up. So ill keep the Kamado and my Weber Performer. I think I can possibly squeeze 4 butts on it with the elevated rack option but it would be tight. I may change my mind if I can think of somewhere to store the ole UDS out of sight.

Hope you enjoy the kamado, I've found mine so easy to cook on, that I couldn't justify the cost of a party-q. My kamado holds the temps so steady there really isn't much for me to do other than drink a beer and relax, which is just fine by me. The brisket looks great.

I think you may be right.  My UDS was good but I think this KJ is better.  I will decide on my next smoke.  I may try some ribs and then a pork butt.....if all goes as planned that will be a lot of beer time :)

Your kamado is like a new gf...she's pretty and new and exciting...but the old girl can give you love and does the little things you took for granted.

Do a side by side cook and you'll be pleasantly surprised with the old girl!

Looks great ricam78! I love my kamado joe! Didn't seem to have much trouble without the DigiQ, but I absolutely love mine. It's almost effortless to run the KJ with it. Stoke the coals and shut it down let the digiQ do the work! Just like everyone is saying you can't have enough smokers/grills. My fiancé thinks you can but never complains when the food comes off the cooker. Good work!
