just brought charcoal up from smoking to searing level


Basket lifted up to the searing level


Kissed with tasty flames!


Fresh off the drum smoker from getting seared


Mulberry wood (out of the back yard) smoked chicken quarters with Alabama White Sauce (close to Kat's recipe) and baked taters!   The chicken was slow smoked @ 250 to an IT of 165 then was seared over coals and flames until the skin was very crisp.  

One thing i can say with absolute certainty, this WILL be on my to do list again!

Thanks Kat!  It's nice having another sauce to break up the monotony, and a great summer sauce.   I might do a small batch with more horsy sauce just for whomever likes the extra bite... i know i do!      This sauce with extra crispy chicken skin is a match made in heaven.

Enjoy!   It's good on way more than chicken and potatoes....i almost had it with my steak.

1 1/2 cup mayonaise

1/4 cup vinegar

1 garlic clove minced

1 TB black pepper

1 TB Spicy brown mustard

1TS sugar

2TS Horseradish
 
Looks great Keith! How low is your cooking grate? Looks pretty deep. Might just be deceiving.
It's close to 8.5" down from the top.  I'll add a 2nd grate about an 1" down from the top when i make a dome lid. The dome lid will only be used when i'm using 2 grates or want to do a vertical turkey etc...
