My wifes friends daughter is turning 16 today and asked if I could do some pulled pork,,,,,,,,,,,,how could I refuse!!! so took it up a couple of steps and told her I would also do some pork candy and a 3 bean casserole for her daughter, More pics thru out the day but here is a start

Up at 4:30 start smoker,,, my smoker usually only goes to 220 with PID so By passed PID and went straight to burner holds steady at 240ish  took butts out of fridge from sitting all night and put another coat of rub on and then to smoker at about 5:45

last night  don't know if I could focus to focus the camera or not

here they are at 4hrs door shut the whole time took temp and at 153 average between all 4 of them look and smell great



These are boneless and weight about 7lbs each, We got a commercial rub when we were in seattle from Dickeys BBQ we are trying, just for something different.

Thanks DS  was going to try some of your pickled acid rain eggs but did not think of that fast enough. What you smoking today??
 
Just plugged in the PID and so it will sit at 220 till about 195*IT then into towels and cooler for a while.
 
Smoker is now full dinner should be ready around 5 just on time

3 bean casserole this is on top shelf of smoker and gave it a little water but will thicken as it cooks - THANKS SMOKIN HUSKER!!! this was her recipe my family loves it

you can get recipe here on side dishes just put in 3 bean casserole. I can post if anyone needs it or cant find it

yum,yum Pork candy 1/2 with a brisket rub and 1/2 with Kirkland sweet mesquite mixed with some brown sugar see how it goes on that one

Smoker  is dang near full I did put a pan under the pork candy to keep bacon grease off the butts
