Use a new braunfels sidebox smoker. Its apple smoking a 10lb top sirloin roast - in the rain- as we speak. Marinated the roast in a bottle of allegro and a bottle if stubbs beef marinade for 2 days and stuffed it with fresh garlic slices. Will report on how it turns it out! Roll Tide Yall!!

Welcome bluetick!    Sounds yummy..  we'll be waiting on the results.   Raining so hard here that I have to live vicariously through other's smoking instead of doing my own. lol 

 

(p.s.. I might be in Tn.. but I agree 100%  my blood flows Crimson not Orange hehe  Roll Tide Roll.)

Here is a great tool you should sign up for and it's packed full of great information, Jeff's Free 5 day E-Course. This can be useful no matter what your experience level might be!

Dont know how to post pic- but uploaded one to random... 4 hrs was a little to long.. Internal got to 160... Afraid its gonna be well done- prefer rare- med rare.... Gonna let sit couple hours then carve
