No need for boneless buy bone in chicken thighs and remove the bones yourself that is what I do.  Or you can just pull the skin off and smoke them with the bones you are going to pull them afterall.    Never thought i would say this but it was super easy and I found step by step instructions on youtube.  Plus you will save money

Exactly what I do.. ill get a bag of drums and thighs. .. cheap cheap at the Hispanic markets. . And just remove the skins..season and smoke. And I put all the skins on the a top rack to render down. Or bamboo stick them as high as I can... the skins are great for bean flavoring.. or stock flavoring.. love it! Im a dark meat chicken kind of guy!
