I've been smoking for a couple of months now and just feeling my way in.
I've got a ProQ Excel which works great as long as there's plenty of charcoal going and the water is hot when going in to the pan.
I've done loads of chicken, some duck but the best so far was some cheap braising steak that I coated with a rub, smoked for 5 hours with cherry, mopped every hour with Reggae Reggae BBQ Sauce and then wrapped and left for another 3 hours.
Most smoking has been done in the rain but being Scottish I don't expect the weather to be any different.
Try not to drink too much.
