Spending the day smoking 3-8# butts. We always have a fireworks party the Saturday following the 4th at my house for family and friends an\d would rather cook in advance so I can relax while the company is here. Jeff's rub, RO lump charcoal, and hickory chunks. Will also do a turkey breast on Saturday.


Got a rack of spare's to throw on in a bit for the wife and me for supper!

2 hrs. in and the WSM has only varied about 3 degrees!AppleMark

Looks good I put four butts in this morn also dropped temp like a mad man hope I make the 140 in 4hrs - good luck on your smoke and thank all of you that has served this great country !!!

About 3.5 hrs. in and i.t. is 135. This is the 1st time I used sand in the water pan instead of water. Seems to hold temp. much better. Took the lid off for pic and stayed temp. stayed pretty much where it was.

Time to put supper on!

Looking good!!! I haven't used water for ages. Makes a big difference when smoking on cold wet and windy days.

I went to sand a year and a half ago and haven't ever thought of using water again.

Very happy with the final result. Very moist and tender. Kept the temp. around 250 and they took about 10hrs.
