MeridianMan,Overall it turned out good. The St Louis were real good, the Baby Backs I put in the foil too long and it was too tender. Also, I read that I could use any juice during the foiling, and all I had was OJ. That caused them to be citrus-ey which I didn't like, so next time no OJ.
The shrimp turned out good, however I was running out of time and it took so long to get all the shrimp onto the grill that it lost a lot of the heat, so I ended up smoking for about 20min and then throwing on the gas side just to finish cooking the bacon. So it turned out good, but I was dissapointed that I couldn't smoke them to perfection.
Overall I was very happy with everything, though. Thank you SMFers!

I like to mix about 6 ounces of Apple Juice & 2 ounces of BBQ sauce, stir it, Nuke it to at least 180* (so it doesn't cool your meat down any), stir it again, and pour it over the ribs when foiling.
Give that a try.
Sounds like your an old seasoned veteran now......... the big question is did you really enjoy it? If so, welcome to my addiction!
Thats looks like a winner meal that everyone enjoyed if the worst that you can say is, "my ribs were too tender". LOL
And my buddy who we ate with is a seasoned smoker and he did Tri Tip. Needless to say we didn't finish it all in one sitting :)What a spread!

Ribs looked good btw!
Since you didn't like the citrus flavor after adding the OJ try not adding any liquid at all during the foiling stage. I don't add any liquid, the ribs will create enough liquid on their own. Any liquid you add will change the flavor, but is not required for tender, moist ribs.
