Getting prepped for a 4th of July smoke! 

On the menu is Spare Ribs, Smoked Burgers, Chicken Thighs, and Dutch's Wicked Baked Beans.

Going to start the smoker up around 10am and ribs on by 11. Brine is cooling in the fridge and rub is prepped. Going to rub, wrap and rest the ribs soon.

Ribs all rubbed and trimmed and into the fridge! My first time trimming st.Louis style...I have much to learn lol

hmm phone uploads to "small". oh well the rest i'll send to my computer first. I've got the trimmings in there to..i'll make some pork candy for a snack!

Unfortunately entertaining, cooking and serving mixed in with 8 little kids running around (my sister's kids and her friend's kids) i didn't get any more shots of the after-Q :/

Food was great! I'm going to see if my sister's mother in law got any shots
