I bought a La Caja China pig box second hand and used it for the first time on a outing with our RV group. We had 22 rigs and some guests for dinner. We started with a 85 lb. pig from a local butcher and seasoned with MOJO and Pork rub, Garlic, Fresh Onions. Followed the directions on the box and it came out great. We served about 50 people with this pig and all the trimmings.

Here are some pictures, can't wait to do it again, soon I hope. What a great dinner and outing with friends. Sorry about the order still new to uploading pictures but I think you get the idea.

It looks great!!! We have one as well and we do a full pig every Christmas (cuban custom) and sometimes once in the summer months. Its a long day but well worth it!

Thank you. It was a lot of fun and the taste was right where we wanted it. I could have left it in a little longer for the skin but it was still a good color and taste as few had to be done a the grill to make the chrisp. We had a good time and are looking to maybe doing Beef next year in the box, maybe a quarter or a half. Also thinking of doing our Thanksgiving outing and doing the turkeys in it. I am sure we will find other uses too, Lamp, Goat etc.
 
After prep and sitting overnight, letting it sit out side in the room until it reaches 70 it is only 3 1/2 hours to done pig. That is after the fire is hot. I followed their instruction to the letter and it turned out great. They have other recipes on their site and plan to try most of them. The group is trying to figure out what I will do next year at this outing to top this one. Who knows I will think of something and will have a full year to plan and try new things. I think we all gained 5 lbs on this outing with all the food we had. We cooked all week and weekend. It started Wed with hot dogs and hamburger, Thurs Tacos, Friday Chicken on the BBQ and Sat Pig oh and breakfast each morning. Next event is Jackson Rancheria Calif. I only have to worry about breakfast on day.
