Chance of rain on the 4th - need advice

Perfect! Let it rain let it rain... and LETS all smoke something (not that smoke you guys) the meat. .fish..jerky..cheese..veggies.. like.. not the 'foliage'.. thats a whole notha forum.... ;):biggrin:
 
Just thought I would report back gang!

Got the smoker started earlier, temp where I want it, and have just put three racks of spare ribs on. She is smoking away, even though it is  pouring the rain outside - the patio cover wife got is doing a good job keeping the rain off for the most part. I also put the rain cover for the stack on just in case as well.

Thanks again to everyone, for the advice and cheering me on! Hopefully the next 5-6 hours will go uneventfully.

Yeah! Great job.. they'll turn out great im sure. Im jealous I dont get a chance to smoke anything this weekend. . Stupid work.

Now I am kind of chasing the temp to get it back up there, that first batch of charcoal burned through really quick, got another half chimney going and in the firepit, at this rate I am going to run out of charcoal.. not sure why it is burning so much faster than my first smoke last Saturday.

I may cheat - I am using 3-2-1, I may do the 2 hour part in the oven... then open them up and do the last hour on the smoker.

I am only into the first hour and a half right now.

To save a trip for more fuel... oven it up. You wont hurt my feelings. Save the briquettes for the last firm up stage just incase the company is there yet ... that away they can see you pull the ribs out of the smoker with awl! A!

Yep, I got about 20 more minutes, then I will foil them up and throw them in oven for couple more hours...

I have already gone through more charcoal on this smoke, than I did the whole 6 hours last Saturday - weird!

Here in the Pacific Northwest if we let rain and wind and snow stop us, we'd never get to do anything outdoors. The quick covers work great. If you have a Harbor Freight near you they have some of the better prices, especially when on sale. The covers also make the operation on a hot sunny day more bearable!!!
Not to criticize but if I lived where you do I would be looking to build a more permanent structure. Maybe a trellis which would allow you to add a canvas cover when needed (I'd angle it a bit so it would drain off the back of the deck. I like the EZ-Ups but when there is wind they can be a bit problematic.
 
Well the ribs turned out great gang.

My daughter's husband commented, they were the best tasting ribs he has ever had, and has been several years since he had any close to this good.

I certainly had my hands full, I mean it poured the rain virtually all day. Even with the portable patio cover, I was getting wet going from my door leading out to the deck, to under the cover.

And, I was having to really stay on top of the temps.  For the most part of the smoke, I had trouble keeping the temp up between 225-250. And boy was I going through the charcoal, I have no idea why it took so much charcoal, as compared to my first smoke. Perhaps the weather, it only got up to like 70 degrees, and pouring rain. I did the 2 in the 3-2-1, foiled in the oven. Then back on the smoker for the final hour.

I used Lambert's Sweet Rub of Mine, with some brown sugar sprinkled in the rub after applied - for the mop I used 50-50 Apple Juice/ Apple Cider Vinegar, squirted on heavy every hour. The final hour I used Sweet Baby Ray's Sweet and Spicey on some, and Honey BBQ on some.

They were literally fall off the bone. Even better than my first smoke. 

Sorry, no pics after taking off the grill, I was tired, wet, and ready to eat...

Lol, one thing is for sure, the next time I smoke in some pretty weather, it will be a piece of cake!

Oh, also we have company coming tomorrow afternoon, my wife's aunt and uncle and their two teenage daughters from out of town to spend the night.

Now I am not going to be doing a smoke, but wife does want me to grill out burger and dogs on the new OKJ. Will have to use the large barrel as a direct charcoal grill for the first time. Charcoal grates are kind of far down from the cooking grates, figure I put enough charcoal in there it will get hot enough.

Oh and yes, tomorrow is showing 80% rain with thunderstorms all day - augh!
