Grilled Bison Burgers

For the bison burger patties I used:


  • 1 lbs ground bison
  • 2 oz. blue cheese
  • 1 egg whites only
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp dry mustard
  • 1/2 tsp paprika
  • 1/2 tsp chili powder


and for the spread:


  • 1/2 cup mayo
  • 1/4 cup ketchup
  • 2 tsp franks hot buffalo sauce
  • 2 tsp finely chopped parsely
  • 1/2 tsp garlic powder

I must say the bison meat is really good! This was my first time trying bison, and I wanted to grill it so I could get a sense of the taste. Next time I will smoke these, probably with mesquite. The spread is good, but next time I will use fresh garlic instead of the powder to get a little aioli thing going on. The spices in the bison burger went well with the blue cheese and spread. I will have use this recipe again soon..... with TBS next time

That did sound a little spicey!  Now put it in some smoke!

I've been wanting to try a bison burger, this recipe sounds good. And they look delicious.
