Ok, I have two very important and very fattie unfriendly dietary restrictions: No dairy products and no pork products. So, after searching this forum and my own creativity, I've come up with these two fattie ideas that I'll be trying on 7/4. I thought I'd run them by everyone to see if anyone has any tweaks or suggestions.
Also, I had a (I think) great idea for others that can't or don't want to use bacon as a wrap: chicken skin! I'm going to steal some chicken skin from some chicken drumsticks I have and wrap them as best as possible around the fattie to add fat and keep it moist. For those that want to get really serious about it, I imagine you can get chicken skin from the local butcher or supermarket.
To the recipes:
Thanksgiving-themed Fattie (idea not mine, but some new ingredients).
The ground turkey - flavored with a mix of traditional turkey herbs and more Q-friendly things like brown sugar and paprika. I'll probably do a mix of smoked turkey rub and roasted turkey brine.
Inside - my grandma's fixed up cranberry sauce (the secret is canned pineapple), walnut stuffing (I think the oil in the walnuts will help keep things moist), and asparagus.
Mexican-themed Fattie: (again, not the first to think of this in general, but some new ingredient ideas)
The ground turkey - I either want to use my go-to taco seasoning or perhaps a turkey chorizo recipe.
Inside - homemade refried beans, black olives, onion, garlic, tomato, spanish rice, (maybe avocado???).
So, what does everyone think? As I've said, I know I'm not breaking new ground with the concepts, but I haven't seen these particular ingredients used yet. I'd love to hear what people think and suggestions about what to add or leave out.
