So I thinking of trying this recipe from Jeff using my new WSM.  I have not tried a reverse sear and he talks about a iron skillet.  So is this something I would put in the grill during the smoke to get hot or is this something to be done on my gas kitchen stove?  Are there cast iron skillets that have a cross hatched pattern built in?  Thanks

As stated above Lodge does sell a pan with ribs in it. ...but a regular cast iron skillet without the ribs is a great way to reverse sear a steak. Either way get it rocket hot and sear away!

Another great way to sear is to put your grate directly on the coals and sear right there. You can also sear right on the coals, but you need to knock the ash off first. Just some other options to consider.
