Recently bought a smoker on a whim, something I've been wanting to do for awhile and finally did it. Partially inspired by all of the great smoked food I found while living in Arkansas for the past few years. Originally from Ohio, just looking for a new hobby with the payoff of (hopefully) good eats. Picked up an MES 40 to get my feet wet with. I joined the forum because while I was doing my initial research into this, I kept ending up on here and finding such great advice. Looking at taking my first crack at ribs this weekend, so if anyone has any veteran advice to give me, it'd be much appreciated.
