I have been smoking for a few years and now its time to build a Cadillac smoker. Been doing a lot of research on here about builds. But I've been really liking the center firebox with horizontal food chamber. I got a 240 gallon tank been working on. I will be posting drawing plans tomorrow. So I'm hoping people can help me out.
