My Largest Butt Smoke Ever

Greetings all,

A few weeks ago I posted some pics of my first Boston butt smoke, and I recieved a lot of encouragement and tips on types of smoke. Today, I am cooking some pulled pork for a kids camp for abused and neglected kids in the foster care system. This has turned out to be a bigger project than I had anticipated, but it looks like it is going to be great fun.

This smoke is going to be a challenge for me for two reasons. First, I am maxing out my smoker (TMLE) for the first time since making my mods. Second, it has started to rain.

So, here is some Q-view (more to come later) of 48 pounds of Wilbur.

The rub is a three to one ratio of light brown sugar to my proprietary protein powder. I am smoking with a roughly two to one ratio of apple wood to cherry.

Man, that is a lot of pork!  Looking great so far!  Its a good thing you're doing for those kids...KUDOS!

Thanks guys, working with the cold rain today was a challenge, but for the most part I was able to maintain a 275 degree temp for 4 hours, which is when I finish in the oven. Controversial, I know, but I have had good results with this method. I had to be...creative...with getting six pans into my oven, but in the end only a couple of corners on two butts were singed (the meat wa good but some bark had to go) and the butt in my oven's cold spot only got up to 179 degrees by the time I had to get the food to camp (but the meat was still tender enough for sandwiches).

The reward in all this was hearing the kids enjoy their dinner. One girl started making urgent 'ah uh, ah uh' sounds. We asked her what was wrong, and she said the sandwich was really good. The whole goal of the camp is to give these kids experiences of love, for me that means food, and their happiness with their meal made the hours of work worth it

OK, I promised more Q-view. Due to the rules of the camp photography is restricted and I didn't pull it until I got to the camp, but I was able to take a few pics.

Nice Job Nogeek!!!

I've never done it, but nothing wrong with finishing in the oven in special occasions!! Maybe a lower temp & longer time in your oven would eliminate some being singed & one being only 179* IT ???  Just wondering. I would think that would make them all equal.
