A few weeks ago I posted some pics of my first Boston butt smoke, and I recieved a lot of encouragement and tips on types of smoke. Today, I am cooking some pulled pork for a kids camp for abused and neglected kids in the foster care system. This has turned out to be a bigger project than I had anticipated, but it looks like it is going to be great fun.
This smoke is going to be a challenge for me for two reasons. First, I am maxing out my smoker (TMLE) for the first time since making my mods. Second, it has started to rain.
So, here is some Q-view (more to come later) of 48 pounds of Wilbur.
The rub is a three to one ratio of light brown sugar to my proprietary protein powder. I am smoking with a roughly two to one ratio of apple wood to cherry.
