Went from a propane smoker to a WSM - I'm impressed!

I have a Masterbuilt 2-door propane smoker that I have been using for the last 6-7 months, and after my last smoke on it I figured I had endured enough with it. It wasn't a horrible smoker, but I had a heck of a time keeping the temps in line and it made almost zero smoke at low temps. Even after a few mods that I learned about here on SMF it was still a pain to use. I had decent but not great smokes on it, and it wasn't for a lack of trying - I have used it almost every weekend since I got it.


Anyway, I decided it was time for something else and after a ton of research, I bought the WSM in the 18.5" flavor. It's running its inaugural smoke right now (a nice tri-tip), and the thing that has stunned me the most is the temp stability. I really didn't know what to expect, so I fired up 3/4 of a chimney of KBB and dumped 'em in along with maybe 10-12 unlit briquettes and a fist-sized chunk of oak. All of the vents were wide open and it got up to 325-350 degrees pretty quickly. I closed all 3 vents on the bottom and waited a few minutes. Within 10 minutes or so, temps were 210-215, so I opened 1 bottom vent about 75%. Boom! That was it. It's been between 225-230 for the last hour and a half with zero intervention from me. Unbelievable! I'm sold on this little beast, looking forward to many smokes on it.


No Q-view this time around, but I'll make a point of it next time. smile.gif

The tri-tip turned out absolutely fantastic! Cooked to perfection (145 degrees IT), tender, juicy, excellent smoke flavor. My wife was impressed too. I'm a believer!
