I'm new too this. I got a new smoker last weekend for fathers day. my old one was junk. I'm smoking some legs.thighs & breast. at 225 - 250 how long should it take? My wife wants me too smoke some pigs feet also. she'll boil them firt. any suggestions?

Have not done pigs feet nor have i done hog maws......BUT i'm planning on doing them both so i'm glad you brought this up. 

I would guess they need to be treated similar to beef short ribs (which i'm doing tomorrow) and brined prior and or slow smoked low and slow with a mopping periodically (every hour or so)  and smoked 5-6 hours.  Super tough connective tissues need that L&S plus moisture to break down.

I'm changing my ways and want to broaden my horizons....

The chicken will probably take 2- 2.5 hours. The pigs feet? your going to have to tell me. Remember to post pics. Or you will be seeing this

Never tried pigs feet, but I do smoke the shanks. Cure them and then into the smoker for 6-7 hours until done. Can't beat them in  a pot of Pinto beans.
