Smoked my first fattie a few nights ago using teeznuts as inspiration.  Went with a bbq bacon cheese burger theme.  Forgot to take pics of the assembly but I rolled out the beef put down some bbq sauce, sauteed onion, cheese and partially cooked bacon, no wrap. Seasoned with lawrys wrapped and put into the freezer to set.  Cooked initally at 225 on the MES with a blend of hickory, oak and apple, ended up having to raise the temp to 250, cooked to IT 160, pulled and set aside to rest.  Flavor was good, perhaps a bit heavy on the smoke and a touch on the dry side but all in all a good eat.  On to the finished product.



Being my first fattie I was worried about a blow out which did not happen, big wuss, hence the foil boat.  Not sure if that was the cause of dryness or the temp or lack of bacon wrap.
