Hi all - 

New SMF member here from the great prairie lands of North Dakota.  Have made my own venison sausage from commercial spice mixes many times and got the urge to start smoking it.  Asked my family for a smoker as a Father's Day gift, and my first batch of bratwurst is smoking in my new SMF 40 as I type.  I haven't even tasted it yet and already I'm hooked!  Lurked on the forum for a few weeks reading many very informative posts, and now I'm going to start asking questions of all you seasoned smokers!

Welcome to the forums! Glad you've joined us. You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food! Great place awesome folks, unbelieveable search engine, but you'll figure all this out soon enough.

The Guru's are so good they can be equipment to geographic region specific with answers although N D. is a bit far off.

I will make a suggestion, that from now you you keep a log. A book, file, flash drive, card-ex, recipe book with all your cooks. It make your life a lot easier when you remmebr what you like and didn't like last time. Fill a cook with date, meat, smoke, preps like brines and rubs and trimming, time and temp in the smoker and IT, rests and /or foils. Then come back and do a post evaluation so the next time you know what to tweak and what not. It really helps.
