My name is Frank, I live in the north east (New Jersey). I am currently in the military. I have been smoking kilbasa once a year for about 3 years. It is a yearly thing my friends and I do and fill in for each other threw our deployments. We tried making our own updight smoker. It works but as I get more into it and learn more I see our issues ( there are many. LOL). I am about to purchase the Brinkman TrailMaster as my first personal smoker. Which is how I found your forum, while doing research. People seem to like it for the price as a start up smoker. I also try to hunt and fish as much as possible and have found many recipes for smoking game and fish. I recently came across a couple on this forum for chilian sea bass and smoked oyster that sound funomimal. That is why I decided to join the forum. Everybody seems very knowledgeable and willing to offer advise to newbies ( I will need often). That just about covers it.
 
Welcome to the forums, Frank!  Glad you've joined us.  You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Just ask any time you need help and you'll get plenty!

welcome.  lots to learn on this board.  have u smoke any game meat before.  im a newbie smoker and have been getting into it heavily.  a friend has a huge skinless wild turkey breast he wants me to smoke and im looking for any advice.  seems like only a few have smoked wild turkey breast. alot say you need to brine and inject. i like brining but not a big fan of injection.  i do plan on wrapping with bacon.  maybe my wife will make me a weave again!
