Here is what I use for cooking thicker or larger pieces of meat over the fire. It is a cantilevered grill that goes in and out, up and down and spins for adjustment. The cover is the largest SS bowel I could find. Just screwed a handle on top.

I wasn't cooking in this picture. I also use it when a T storm is coming, keeps the fire going.


The cover holds the heat and allows smoke to roll through the food. I normally build the fire up with hard wood and cook over coals.
 
I'm more used to a tripod, but I love the easy access this provides.
Like the aesthetics over a grill too!
Thanks, I still use a tripod for hanging my dutch ovens because of weight. I like this set up better for grilling because it swings to the side and I don't have to lean over the fire pit.
