Hey folks, new here, in NE Florida. I smoke on a smoke hollow gas smoker, started with a wsm. Pretty decent with the stuff you can't screw up(chickens, pork butts), have gotten a couple of briskets right, more wrong....screwed up some cheese pretty bad....
