Hey guys -

I have an ECB smoker, have done the mods, and am wondering...for a smoke with temps in the 225 degree range, how many briquettes do you guys use?  Or, if you don't count them out, is it full chimney, half chimney, etc.  Also, do you dump the lit and "greyed" coals onto unlit charcoal, or just go with the lit charcoal straight up?  Any info is helpful, the more the better!

Also, how often do you have to add charcoal, and how much (i.e. 12 briquettes every 3 hours and so on...)

Thanks a ton!

If you are using the minion method, use as many coals as you need to last for the smoke. I start my UDS with about 6-10 fully lit and ashed coals. With the minion method I can run for 15-20 hrs no problem on a 10lb bag of charcoal minus the 10 to start it.
