I just ordered my new smoker from Sears (since they will deliver it and it won't fit in my Mustang.) It's a 30" Masterbuilt with the remote control. It has a glass door, which I didn't want, but that was the one they had.

I'm a retired project manager currently living in the Kansas City area with my wife, a Persian cat, and a Poobie (poodle-bichon). I traded in my BMW (which I bought new and only kept for about 9 months because I simply did not enjoy driving it) for a new Mustang GT, which I use every excuse I can find to drive it somewhere. I am also a published author of middle grade and young adult novels writing under the pen name of Cornell DeVille.

I have a YouTube channel that takes us most of my time these days making videos on guns, cars, food, and other items of interest. I'm looking forward to learning a lot from you experts on how to use this smoker once it arrives next week. I know I'll have a lot of questions. I'm looking forward to the adventure, because I really love to eat good food. I hope to create some of that.

Welcome to the crowd Magnum.  I am sure there are plenty of us more than willing to share our knowledge with you.  I promise you mention YouTube taking up all your time right now.  Well once you get smoking you're done for.  Might as well put the Mustang up for sale now, soon you aren't going to have any time.

Congrats on the new smoker!  There are lots of MES owners here, and tons of threads to browse regarding using and modding an MES.  Good luck!

Since you are new to smoking, sign up for the Free 5 Day eCourse on getting started...http://www.smoking-meat.com/smoking-basics-ecourse  There is a lot of things to learn and the Search function is very helpful. Search any type of Meat you want to try or any topic, like Wood, Sauces, Rubs, etc. This should be interesting too...http://www.smokingmeatforums.com/newsearch?search=mes+mods  and http://www.smokingmeatforums.com/t/87723/mes-hot-mods-related-mods-or-creations

With out a doubt your next purchase should be a good Dual Probe Thermometer, one to monitor meat Internal Temp (IT) and one to monitor actual Smoker Temp, sometimes MES temps can be off by as much as 20*F from the set point...AND...When you get to long smokes, 10-20+ Hours for Butts and Briskets. adding Chips to the MES every 30 minutes gets OLD REAL FAST! There is a great Pellet Smoke generator that was designed specifically for the MES called an AMNPS. It was designed and sold by one of our members and a site sponsor, Todd Johnson, and his Customer Service is by far the best of any company in existence. He sells the AMNPS, the Maverick ET-732 Thermometer and the Pellets in a huge variety of flavors. There is a 20% off sale going on until tomorrow. See him at...http://www.amazenproducts.com   Tell him I sent you...That and $7 will get you a Big Latte at Starbucks...
