Last night out of the blue my lovely wife said - we are out of pulled pork (when I make a  batch I pack 1-2 lb vac-u-seal bags with sauce and freeze em for later) and asked 'you wanna smoke some?"

Before I could answer I headed for the local BJ's and found their bone-in butts were on sale (It gets better)...Then looked at the spares and they were on special as well..

Came back home and made up a batch of my modified Jeff's naked rib rub and went to work;


A nice 9.3 lb butt.  Bigger than I normally smoke so we'll see.



They've been sleeping overnight in that rub and will be ready for the smoker.  Along with the hickory and apple wood I chopped up last night.  

All this to say HAPPY FATHERS DAY TO ME..Stay tuned.  Smoke starts around 5p so it'll be an all night and Saturday event.
 
Now that's a Fathers Day gift to get excited about....MEAT....lol. Safeway here has a 'sale' on butts in the bag for 1.49 a pound.....not bad considering Costco is at 1.85 but not that great either. Enjoy your smoke....Willie
 
OK the smokes going well.  An interesting note - the ambient temp is hovering 230 - 245f and only after 4 hours the IT has already climbed to 136f.

With the next spray down - and I get to peek at the butt, i'll snap some Q View and share.

Now onto rubbing down the spares for an overnight rub soak waiting to join the smoke tomorrow late morning.

Good thing I have my head lamp, lawn chair, and favorite 12 oz curls close by

With all the walking to / from the smoker I forgot to take a snap of the ribs....Needless to say they've been rubbed, wrapped and are sleeping in the magic rub waiting for the morning smoke...

Beautiful crisp morning so all is well.  Ribs going on at 11:30.  Q View coming up.
 
Looks good! Where you stopping your pork butt at? 195 205? Everyone does this different.

I usually bring mine out at 195.  However I waited this time until 200f.  Turned out a little dryer on the fire box side however.  This was even turning the butt to keep from doing so...
 
OK the ribs are about to come off and after foiling they litteraly fell off the bone.  I know this is not how a judge likes a rib but doing this for my son and this is his preference...

Here's the pulled aftermath.  Using SOFL finishing sauce as always and i have to say it's to die for....

Adding some cilantro lime butter on grilled corn on the cob and PP with a side of ribs...HEAVEN. 
Interesting as I saw the temp stall at 196 (yea this was a big tease after being up all night..) then rose to the occasion of 200f at the 18 hr mark.  Whew...
 
You could have waited until closer to dinner to post that PP picture. Now I'm hungry. Looks so good.
