Since this was my second brisket I decided to leave temp probe out and went solely by color, and by feel .... I figure this is the only way I will learn how to make consistent briskets .... Thanks to Aaron Franklin's videos and others , and the many members of this forum whose own trial and error have gone before me .. We simply learn from each other and pass it on ...

Love it , Brisket is next for me.... What rub did you use ? ( if you don't mind sharing )

Defiantly love the home brew as well,  at least your drinking  "REAL" beer  only if more folks would give up the Bud Miller Coors and discover what truly good beer is. and how much it enhances your food.

Cheers.
