Pork Butts at Dawn!

Got roped into doing some BBQ for my both my daughters classes.

First one is getting some pulled pork, so I tossed a couple of 10 lb. butts on at midnight, tucked my WSM in with it's welding blanket wrap, and went to bed. Woke up at 6:00 AM, temps were right were I left them 250°, butts were at 180° IT, and the bark is looking good!


My other daughters class needed side dishes so I figured a big pan of Dutch's Wicked Baked Beans was in order. For you new WSM owners note I just tossed in some wood chunks and that is why you see a lot of smoke in the first picture, then just 5 min. later it was already settling back down. Don't be alarmed when you toss wood on and get heavy smoke for a few minutes, it will settle down.



I'm sure my neighbors love the smell of hickory with their Wheaties... lol. Course the know to come over for "samples" later on.

lol.... its about time for my once every 6 months "cleaning". I just take a wire brush and knock off the heavy stuff while leaving a nice undercoat to make sure everything stays sealed.

............. and here is a shot of the pork, I sprinkled a little bit of rub on at after I pulled it for a little extra flavor. The beans got picked up before I got a chance to shoot a picture.
