Got roped into doing some BBQ for my both my daughters classes.
First one is getting some pulled pork, so I tossed a couple of 10 lb. butts on at midnight, tucked my WSM in with it's welding blanket wrap, and went to bed. Woke up at 6:00 AM, temps were right were I left them 250°, butts were at 180° IT, and the bark is looking good!
My other daughters class needed side dishes so I figured a big pan of Dutch's Wicked Baked Beans was in order. For you new WSM owners note I just tossed in some wood chunks and that is why you see a lot of smoke in the first picture, then just 5 min. later it was already settling back down. Don't be alarmed when you toss wood on and get heavy smoke for a few minutes, it will settle down.
I'm sure my neighbors love the smell of hickory with their Wheaties... lol. Course the know to come over for "samples" later on.
