New to smoking loving it

Howdy I live in western Washington I bought a smokey mountain smoker.i smoked some ribs but found it hard to keep the temp. Up I'm thinking I had to much water in bowl as I filled it full with our weather . I started with around 50 charcoals ended up adding 25 more but still couldn't get up to 240 250 on the temp . Having all the vents open could only get up to 180 190 . So I think this weekend I'm try 1/4 pan of water see if that helps bring up the temp any ideas ? Thanks
 
You might try a blanket over your smoker or place it out of any drafty area`s.. Welcome to SMF good to have you with us..

You might want to check out Jeff's Free 5 day E-Course, it will teach you all the basics plus a whole lot more!

Try filling your water pan with sand or pea gravel, it will hold temps a lot better. Water can't go above 212* so anything above that and it is just sucking all the temp out of the air. If you still want some water for humidity or to catch drippings you can put another pan right on top of the sand pan for some water.

I have a question looking for help I am gonna smoke a brisket and a pork butt on a SMS does that seem ok I'm new to this so any tips would be appreciated thanks
