FYI - I did run hot (250 to 275) after I foiled. Part of that was to make up for heat I lost to the broth and foiling process.
 
Good deal.....I really like the one I have.  Was not the one I wanted....but I am glad I got this type.  Works well...and rather quickly too!

Roast and veggies look great.  Think I am going to have to try this too.  Lynn will groan...he loves roasts on the stove top.
