A few years ago, I moved north of the Mason-Dixon Line (Pittsburgh) because my job moved. BBQ and Mexican are non-existent here. They try at Mexican, but haven’t found a BBQ joint here. Have to special order a packer cut brisket from specialty butcher. Only flats around here for pastrami and corned beef. Enough of that.
I have a Brinkmann Gourmet Electric Smoker. It was a gift. I’ve used it a few times, but I’d like to get serious about smoking. I know it’s not the best and plan on upgrading if I maintain smoking. Time seems too precious on the weekends. I plan on doing the typical mods. I’m doing a brisket this weekend and will follow up the Roll Call post with one in the general discussion group.
