Been awhile since I've posted here. Been busy with life and my two young sons. I've been smoking plenty of cheese, ribs, chickens, an so forth in the MES and occasionally the New Braunfels offset but I've been wanting an easy to use charcoal smoker for those times when I just want to do a couple racks of spares or a chicken or two. I've been using my Smokey Joe Silver a lot lately to grill so I decided to do the Mini WSM conversion. Let me tell you after my first initial attempt that I think I'm really going to like having this option around. The ribs yesterday were some of the best I've every produced. I look forward to experimenting with it this summer as well as continuing to mod it.
