smoker question

I have a small brinkman smoker, It has 2 racks, the lower rack is directly on top of the water pan.  I have never used this rack.  Is it ok to use,  (I know....dumb question)

also

When you smoke a whole chicken, what do you do with the inards? any tips

Welcome to the group mr2services.

Yes you can use that rack. when I smoke a chicken sometimes I smoke the neck to have something to taste while I wait. sometimes I let the dog have a treat. Remember to post some pics.

I use my lower grill all the time on my WSM and it sits right atop the water pan. Nothing beats a full smoker.

 

The dog gets the bird innards when I smoke.

I like to Smoke the 'inerds' and use them in Giblet Gravy , Chicken Stews ,Drity Rice... on and on.
