I have smoked a butt and brisket in the last three days and decided its time to try ribs. I like baby back so I searched this site and found out how to cook them using the 2-2-1 method. I started about 11:00 am today with two racks washed, pulled the skin and sprinkled with Worcestershire and applied a rub based on a recipe I found in a smoking cookbook.

.
Two and a half hours at 225. I went a little longer here because I like my ribs a little dryer than some. Then the ribs are ready to wrap in foil with a 1/4 cup of apple juice.

1 and 1/2 hours later pulled the ribs, unwrapped and back in the smoker for the last hour. 5 hours in I checked them by lifting one end of the ribs with tongs and had quite a good bend without falling apart. Just the way I like them.

Liked the looks of the ribs. not much of a smoke ring and the pics don't do it justice. The were excellent for my first shot at it and the family was pleased with them. Its all GOOD!!!!!

Thanks to the folks here at SMF for providing all the information and encouragement for me to be able to succeed.

I do soooo love good ribs!  You did a great job!  Next time will even be better!

They looks great! Looks like you are using a new MES to smoke in. You can pretty much forget Smoke Rings out of an Electric. There just isn't enough wood or gas burning to generate the NO2 needed to pink up the meat. Some have had success with throwing a Charcoal Briquette in the chip pan. But considering that smoke ring is all show and has little affect on flavor, the choice is yours as to it's importance...I have never had anybody Spit out a mouthfull of my Q and complain, " This Sucks! There's no smoke ring..."
