I have smoked a butt and brisket in the last three days and decided its time to try ribs. I like baby back so I searched this site and found out how to cook them using the 2-2-1 method. I started about 11:00 am today with two racks washed, pulled the skin and sprinkled with Worcestershire and applied a rub based on a recipe I found in a smoking cookbook.

Two and a half hours at 225. I went a little longer here because I like my ribs a little dryer than some. Then the ribs are ready to wrap in foil with a 1/4 cup of apple juice.
1 and 1/2 hours later pulled the ribs, unwrapped and back in the smoker for the last hour. 5 hours in I checked them by lifting one end of the ribs with tongs and had quite a good bend without falling apart. Just the way I like them.
Liked the looks of the ribs. not much of a smoke ring and the pics don't do it justice. The were excellent for my first shot at it and the family was pleased with them. Its all GOOD!!!!!
