Hey Guys, newbie from California here. I've been reading a lot and finally registered to ask my first question.
I have a wine barrel smoker that i have been using charcoal in but I want to use an electric element for an upcoming overnight smoke. Just feel more comfortable with electricity than a fire in a wooden barrel overnight!
The problem I'm having is if I put any sort of drip pan or the metal tray I use for charcoal suspended over the element I cannot get temp higher than 200. The foil pan and metal tray seem to disperse heat but not to where i need it at the grates if that makes sense. Without the tray I can get close to 300.
I dont want to have the heating element exposed and catch drips and possible flare up so I was thinking about covering the element with lava rocks.
Any other ideas you guys might have? Should I just leave the element exposed?
