Here is my Memorial Day smoke from the thread what are you smoking grilling or frying for Memorial Day
I am using the 3 2 1 method on 3 racks of pork ribs
1 mixed up a batch of rub
1 rubbed the ribs EVOO for a binder
2 onto the UDS
3 on the UDS
4 after 3 hours
5 after 3 hours
6 out of the foil after 5 hours look how the meat is pulling back from the bones
7 5 hours
8 ready for sauce 5.5 hours
9 sauced 5.5 hours
10 done 6 hours with sauce
11 done 6 hours with sauce
12 done 6 hours without sauce
13 cut in half

now the ABT'S with corn on the cob and garlic bread on the gas grill
ABT's with my apple smoked bacon with POP"S cure
now the egg rolls.
about 1/3rd of a head of cabbage sliced up a few carrots run through salad shooter. a large onion diced. ground pork scrambled and cooked lots of black pepper a little kosher salt and EVOO
sweat out the cabbage carrots and onion in a pan of EVOO season to taste. add cooked pork. let cool. then roll into egg roll wraps
rolled up
all rolled up
into the 350 deg oil. don't use to much oil or they will float. which makes it hard to cook both sides. don't cook to
many at once. keep the oil hot 350
out of the oil to drain
all ready to eat. i use soy sauce. some prefer vinegar or other dipping sauce
I have used PP and shrimp in the past anything else you want can be added
