I have an electric smoker that I want to add on a temp control.  Mine is a High, medium and low.  I want to add a controller that I can set and walk away and it stays there or close.  What do you guys do?

Mike, morning and welcome to the forum......  sometimes adding a dimmer switch helps....  it adjusts the wattage to the element....    I have one on my MES 30 and it works great....  Takes a bit of use to get it right....  a medium learning curve....

Hi Mike,

There are devices like the auber PIDs (http://www.auberins.com/index.php?main_page=index&cPath=14_28) that will sit power-wise between the smoker and your electric socket. They work by using their own temperature sensors (and leaving the smoker temp on the highest setting) to provide intricate control of smoker operations (smoker temp and programmable cooking steps based on smoker and/or internal meat temperature, and times). They're considered much more accurate than most smoker controllers, but may be more expensive than you wish to spend (though they are pretty much "plug and play" without requiring any electrical work).
