Thanks, Kat. If you are like me, you have a list of projects you want to try from all the great posts on this forum I just had a look. I am over twenty I have bookmarked to try. I will be smoking for years at this rate. Woo Hoo!

That is some great looking pepperoni and something I have never yet made...only pepperoni flavored snack sticks! Glad you put the title of the book so I can purchase it and try the pepperoni you made. With the list I have of to do's I'll be smoking foods well into the hereafter!

Thanks Pineywoods. If this is the worst that happens on this forum, it is still one of the best forums on the net. I have learned more here than I have with hours of reading and surfing. Let's all smoke meat and get along!

That pepperoni looks outstanding!  Nicely done!

The verdict: This is better than the cheap pepperoni in the prepared meat section. It has a nice spicy flavour and a firm texture. I did find it a touch sweet and would reduce the corn syrup called for in the recipe. However, there is no contest between this and a high quality fully fermented pepperoni. The texture isn't as solid or smooth. The fermento does add flavour but not the wonderful sharpness of a fermented product. I will make this again to throw on a pizza or a sub sandwich. I would not serve it by itself on a charcuterie plate.
I bet that would be great topping on a pizza!


Especially when cooked in a real pizza oven!
