Shredded Chipotle BBQ Turkey Tenderloins and Smoked Burgers

I picked up these turkey breast tenderloins at Costco and was going to put them in the oven as directed on the package until a "light bulb" came on in my head. I decided to put them on the smoker instead. I was worried about drying them out since I couldn't brine them but since they are already marinated in the Chipotle BBQ and figured if I injected them with some Jalapeno and Butter Marinade that would keep them moist enough.

Also picked up some ground beef and after seeing some smoked burgers on here decided to toss some of those on also. I stuffed them with some bacon cheese that I smoked back on 02/18. Seared them in a cast iron skillet after smoking for 1 3/4 hours at 240 to finish them. Topped the burgers with some smoked pepper jack also smoked on 02/18, I did not get pictures after bringing them in from smoker, sorry. I will definitely make these again! Thanks for the ideas of smoking burgers!

I put the turkey in foil pans with the extra juice in package for smoking. Smoked for just over 2 hours and pulled at 255, covered with foil and put in oven for 30 minutes to finish. I got to try out my new bear paws for shredding, Holy Cow, they work Awesome! Turkey was moist and not dry at all, and the taste was Excellent. I am going to freeze some of the 6# of turkey in the Premium Bags I got from Lisa at Vacuum Sealers Unlimited, I love these bags, they work great for moist foods without having to partially freeze the food prior to sealing!

Both were smoked on my MES 40 over Pitmasters Choice Pellets with my AMNPS. I made up a simple new heat shield today for the AMNPS and it seemed to work great. I also filled my water pan with sand for the first time and covered with foil. It took a lot longer to get to temp, but maintained very well.

Its always a good day when you can smoke something for dinner and have leftovers too!
