Hey folks,

I felt so bad about the measly Q-View I posted earlier today that I defrosted a couple of tenderloin steaks for a reverse sear this evening!

I hope you enjoy!

I started out by sprinkling a little Lowry's on the steak then putting some Pitmaster's choice dust in the AMNS and dropping that sucker in the MES30 along with the beef.



Onto the HOT Weber Kettle!


I usually tell folks "when doing a reverse-sear, cook to about 110-115 IT on the smoker then two minutes on each side for med-rare" but these steaks were so thick I had to go to 120 IT on the smoker and they had six sides!!!!!



Here is the money shot!


A perfect Med-Rare! 

I only cook steaks with a reverse sear now, mainly because my youngest, Trevor, always requests them that way!!!!  If you've seen him you know the boy needs some meat on his bones!
