Simply covered the salmon in a little canola oil and salt & pepper. Put a cast iron pan right into the hot coals and you're ready to sear.
This turned out so good! Crispy outer and creamy inner. Served with cilantro lime aioli and a bottle of cab.

Cilantro Lime Aioli
- 2 gloves of garlic
- pinch of kosher salt
- 1 tbsp cilantro
- 1/2 tsp ground cumin
- juice of 1 lime
- 1/2 cup mayo
- a bit of cayenne pepper
