When we make our salsa, which has a decent amount of other veggies in, we cool the salsa for a few hours in a giant roaster, maybe like 2 hours, the longer you cool it the hotter it gets. But ten we dump it into the jars, screw the lids on and set it upside down on a towel on the counter and let it sit all night... The heat from the salsa will actually seal them and you don't even need to hot bath them! Good luck and make sure to add plenty of spicy stuff :-)
