Imagine my surprise when I logged onto the SMF this morning to post yesterday's smoke to find out I had been inducted into the OTBS! WOW, what an honor to be part of that organization of great smokers, I am truly humbled and honored.
Anyway, I smoked three racks of loin backs yesterday and after finding out about my new status am a little embarrassed to post the meager pics taken during yesterday's activities. But, here they are anyway!
I started with some Royal Oak, hickory, cherry, and a weber starter cube.
I got a pic of the setup prior to unwrapping the rib and applying more rub.
Here they are getting that last minute rub application.
Look at that TBS! Smelled great!
Unfortunately, this is the only shot of the finished product...my apologies.
I hadn't seen my mom for a while so I had her over for her favorite - my ribs.
Everything turned out great, the ribs were perfectly cooked, not fall off the bone but very tender, juicy, nice half moon bite with a little pull and then a clean bone!!! Perfect.
