Well 2 weeks ago today I cold smoked my first cheese, I smoked a colbert and a marble, while I was at it I smoked a slab of bacon. Well the bacon came out super yummy and I had to wait 2 weeks to finally taste my cheese. I have just now tasted the marble and I swear it tastes like a smoked gouda I LOVE it. I used maple and hickory for the smoke and I can not be more happy. To be honest I was a bit worried about cold smoking and then mold on the cheese but nada, no mold, just using a zip loc baggie and I can not get over how great this tastes. I used the soldering iron in a can trick and all I can say is I want to do this more.
I love this forum, so much help, so many amazing ideas, so many nice people when you fark things up :)
Next idea, and the account manager will kill me, but...... can you smoke lobster?
