Just bought a new Cajun Injector electric smoker. One of those good deals even though I've seen some not so great reviews on their previous version. This one is the black box with the digital read out. I'm smoking in Western Kentucky, USA. Put my first meat on last night, turkey legs from a gobbler this spring. Turned out ok, that was the first time I have ever messed with natural turkey legs and I think it was more an issue with the meat than the smoker, tougher meat lots of tendons. smoked at 250 for 3.5 hrs.The smoker ran well, good smoke. I have some learning to do since I am new to the game, but larger cuts, whole or half birds seems to be the way to go. If anyone has any advice on wild game it would be much appreciated.
