The Big Easy
Busy with everything else not related to BBQ, I haven't been able to get a low and slow cook going. However, that all changed today. I am still new to smoking, but have done several butts, ribs and some chicken, but never pork loin.

I found a pork loin roast on sale at my local market and figured I'd give it a shot. I am still fighting some things with my smoker, but the food came out great. Anyone who hasn't smoked a loin before should definitely try it. I didn't even brine mine and it came out really moist and tasted great. I don't even like pork loin all that much.

I just rubbed it down and hit it with some hickory, but mostly apple. After a few hours, it was done (145*). I didn't wrap it in foil, except to rest for at least 30 minutes.

I have some questions about temperature control, but I will start a new thread, I added some pictures for feedback, so any comments are appreciated.
