Smoked "Rusty" Chicken Thighs

I got the recipe for this marinade from Chef John at:

I doubled up his recipe, and used:

4 cloves of garlic, crushed in mortar and pestle

4 tbsp sambal oelek chili paste

3 tbsp maple syrup

4 tbsp soy sauce

6 tbsp seasoned rice vinegar

4 tbsp mayonnaise

1/2 tbsp coarse ground black pepper

1/2 tbsp kosher salt

Chef John uses this marinade on boneless skinless chicken thighs and grills each side, I have tried this several times and always love the way this marinade smells when it hits a hot grill. I decided to use thighs with skin and I seared them skin side down over medium hot heat for about 5 minutes and then smoked them with cherry wood around 275-300 for 1 hr 15 mins until they were cooked to 180IT.




This marinade goes well with cherry smoke, and this is some of the best chicken skin I have ever made. I will use this recipe to sear and smoke chicken again, and soon!
